Place a layer of Tennis/Nice biscuits on the bottom of your dish. Break the biscuits as needed to cover the base completely. The food colouring is entirely optional – you don’t have to add it. But I wanted this peppermint slice to be reminiscent of the one I remember from my childhood. Plus I’m a child of the eighties, so I’m not against a tiny amount of food colouring every now and then. the chocolate topping

A peppermint slice is one of my childhood favourites. They sold it in school and it was always my first choice, closely followed by the fabulous School dinner cake, Mars Bar slice and chocolate concrete! Those were the days!

Into each muffin tin, spoon 1 tablespoon of white cake batter, top with 1 tablespoon of red batter, and then top with 1 tablespoon of white batter. Not only is it super easy to make (there are literally only 4 ingredients), but it’s also ready in no time (OK we have to wait for it to chill a couple of hours at least in the fridge). The vegetable oil is to make the chocolate a little softer for slicing and eating. You could substitute coconut oil if you prefer. As an alternative to a microwave, you can melt your chocolate in a glass bowl over a pan of simmering water. That said, I find using a microwave makes it much easier to manage the chocolate’s temperature. Melt the butter, cocoa powder, golden syrup and sugar together in a large saucepan over a low heat, stirring occasionally. Don't allow the mixture to become too hot.
